no it’s not green tea, or a glass of water. it’s totally yummy, and the bad news is you won’t be able to stop at just one square. so actually it’s just exactly like chocolate. well green & black organic chocolate for me anyway. And tonight I just happened to have all the ingredients in the house.
this is a Thermomix recipe, but you could make it in a good food processor.
(Or any 200g of nuts, I used macadamias)
250g pitted dates
65g desicatted or shredded coconut
25g cocoa powder
¼ tspn celtic sea salt
20g honey (or sucanet, maple syrup, agave syrup, rice bran syrup)
70g raw coconut oil
Line a square or rectangle lamington tin with baking paper.
Place nuts in TM (thermomix) or FP (food processor) and grind until nut meal. In TM this is 8 seconds on speed 7.
Add dates, coconut, cocoa, salt and honey (or preferred sweetener) into bowl and chop for 30 seconds on speed 7. in a FP just process until totally combined, about 2 or 3 minutes.
Add the coconut oil and mix for 20 seconds on speed 5 in TM or until mixture has a shiny appearance. In FP, process for about a minute.
Empty mixture into the prepared tin and press down with the back of the spoon to create a flat firm surface. Using a knife, score lines one way and then the other to create squares. Chill in refrigerator for a few hours. Or, if you can’t wait, put it into the freezer for an hour. When solid, remove from tin, and cut thru into squares. Store in the fridge or freezer.
You can eat them straight from the freezer; believe me, I’ve tried.
